This Week in honor of the Longaberger Buzz and Leadership Conference and the Introduction of the Potluck Basket for the Spring/summer catalog, I've decided to start out with a recipe using the potluck basket and the 2qt casserole!
The Potluck Basket has 2 swing handles, The dimensions are as of yet not quite known but it should be approximatly 9inches in diameter based on the fit of the 2qt casserole and the fact that it interacts with the following pottery:
2qt casserole dish
Grandma Bonnie's 9" Pie Plates
Medium Tip and Mix Bowl
Pie Cover
Pasta Bowls (mostly storage)
I'd also estimate that the 8" work basket protector would fit inside (using the protector as a type of Tupperware)
SO- Using our 2qt casserole dish which looks really nice in the potluck basket, and possibly a buffet brick to keep it nice and warm, we can make some fabulous Chicken Enchilada Casserole! (this recipe was sent to me by my Branch Leader, if you know who made it first, let me know!)
Chicken Enchilada Casserole
1cup chopped onion
2 Tbsp. vegetable oil
1 tsp. each chili powder, garlic powder, ground cumin
1 8 oz. pkg. cream cheese
2 pounds cooked shredded chicken breast
3/4 cup salsa
8 oz. cheddar cheese
1/4 cup chopped black olives (optional)
6 7" round flour or corn soft tacos
1 can enchilada sauce
Heat oven to 350°. In large saucepan cook onions in oil, add spices and then cream cheese over low heat until melted. Add shredded chicken and salsa. Stir 2-3 minutes until hot. Remove from heat. Stir in 1-1/4 cups cheese and black olives. Pour a little enchilada sauce on the bottom of the Longaberger 2 Qt. Casserole dish. Next place 2 soft tacos, 1/2 of the chicken mixture, sprinkle with a little cheese, 2 more soft tacos, remaining half of chicken mixture, last 2 soft tacos, enchilada sauce and top with cheese. Bake 20 minutes or until hot and bubbly.
